While lazing about remembering the good ol’ days of the great south west… we’ve brewed a big Hazy IPA packed full of Citra, El Dorado and Mosaic hops – it’s hazy IPA at its best. Mild bitterness followed by good fruity esters boosted from a low flocculating English yeast. A cloudy and light malt base helps juice up this sessionable 5.8% Hazy IPA that has been hopped multiple times through the process.
An American IPA with a rounded malt character and a resinous hop profile. Mosaic & Citra hops bring out pineapple and stonefruit aromas,
complemented by the citrus spice of NZ Motueka. Pleasant but assertive bitterness on the palate, balancing out a light toffee malt character.
The latest in our quest to develop a Pale the world loves over. Loaded with New World El Dorado hops from the US, with the cleanest and lightest malt base possible. This a beer for the everyday drinker, your new favourite pale…. hopefully!

A crisp bitterness, fermented cold and lagered for weeks this is a classic beer style at its finest. Celebrating the vibrant stone fruit and tropical fruit flavours and aromas of American hop varieties.
Sweet, Sour, Salty. Born from a love of beer by lovers of beer. Two continents colliding into a can – a German classic, with an Asian twist. Utilising a traditional sour mash process and infused with real fruit, the resulting beer is a true taste of Asia in an Australian made beer. A redolent deep orange with a dense rocky head, sweet complex aroma and an evocative and intriguing sugary, sweet, salty, fruity and sour palate.
The distinctive hoppy, citrusy characteristics of pale ales are amplified in an India Pale Ale (IPA). This bold brew has an extra ‘hot and spicy’ kick from the infusion of the fruit of the Australian Native Pepperberry tree, a plant naturally occurring in the cold high country of Southern NSW, Victoria and Tasmania. The fruit is rich in antioxidants, vitamin E, lutein, zinc, magnesium, and calcium. It’s a beer lovers beer!
The Mexican style brew is light, zesty, tangy and hoppy against a sweet yet nutty backdrop. The finger lime, aka ‘gulalung’ is an Australian native citrus fruit naturally occurring around Northern NSW and SE QLD throughout Bundjalung Nations lands. The fruit is rich in folate, potassium and Vitamins C & E. It’s a smashable brew for warm weather or after a sweat session!
A light, fruity beer from the grapefruit and lychee flavour notes of the native fruit infused within it. The lemon aspen, naturally occurring in Far North QLD throughout the Kuku Yalanji Language Nations lands, is rich in antioxidants and Vitamins A & C. Based on a Czech pale ale, this brew is fresh and citrusy with a distinct hop aroma and flavour. Perfect with any light meal!
TWØBAYS seasonal beer for Spring 2019 is a bright and punchy Extra Pale Pale (XPA) with citrus aromatics atop a crisp and lean palette. Brewed with galaxy hops, the beer is somewhere between a Pale Ale and an IPA – in No Man’s Land.
The IPA is a cracking gluten free beer with hoppy passionfruit aromas up front that are quickly overrun by malt sweetness on the mid-palate, followed by a well-balanced, but nicely present bitterness. Amarillo, Galaxy and Mosaic hops provide bright citrus notes.
TWØBAYS first gluten free beer offering is a clean, crisp and easy drinking American hopped beer, brewed with millet, buckwheat and rice, giving off beautifully subtle citrus aromas thanks to its Citra and Loral hops.
Deep purple with a dark crimson hue suggestive of the deep brooding plum fruit aromas with hints of spicy berries and violets.

As with all Risky Business wines, this rosé is produced from selected low intervention vineyards, then hand-made using small batch winemaking techniques.
Delicate attractive pale salmon pink colour with ripe strawberry aromas coupled with a savoury edge. This is a crisp and dry Rose with balanced acidity providing length. The Pinot Noir has contributed good weight and mouth feel with fine and delicate fruit flavours on the mid palate that are well matched by crisp, fresh acidity.

Risky Business Prosecco
The cool climate at the base of the snowfields in Victoria’s King Valley is similar to Italy’s Prosecco Road at the base of the mountains, allowing winemakers to grow grapes in crisp conditions.
Harvested at night, cool fermented with champagne yeast and a small amount of lees contact draws out the unique flavour.
Delicate pear aroma with citrus blossom notes, this light and dry wine has subtle hints of fresh pears, stone fruit and citrus blossom, balanced delicately with just the right amount of acidity, creating a soft and finely textured palate completed seamlessly with lively bubbles.

This Sparkling Riesling is pale straw in colour, with delicate aromas of grapefruit and passionfruit. On the pallet you will find zesty acidity and textured palate weight that makes this a refreshing and bright style.
Nebbiolo is a variety that has a sentimental tie back to the family’s origins.
Winemaking techniques for this vintage included hand picking, extended period on skins post fermentation along with the use of French barrel ageing. All of which has created a wine with notes of rose petals, dried herbs and an ash-like earthiness.
Twenty Five year old Cabernet Sauvignon vines continue to provide a new complexity each vintage. Aromas of black pepper and currant with a flavour profile showing dark fruits and a medium tannin finish.
This Riesling was made in the ‘dry’ style with a long, cool ferment allowing for the natural aromatics to be maintained. This wine has
nicely balanced acid and lively citrus tones.
True to the Canberra District style this Riesling has lemon and pear aromatics. On the palate you find vibrant Granny Smith apple and lime flavours with a balanced acid finish. This wine is delicious now and will continue to gain complexity with age.

Four Winds Sangiovese Rosé
Small yields of flavourful Sangiovese grapes were harvested early to produce a dry, delicate, low alcohol European style Rosé. This wine is
elegant, well balanced and has a delicate light pink colour. Candied apples, raspberry, peach and bright cherry come through seamlessly in
this wine. Perfect for a summer afternoon picnic or with spicy Asian food.
This Sangiovese has a vibrant perfume of strawberry and cherry that integrates with the varietal aromas of dried spices, plum and cinnamon. On the palate the aromas expand into a juicy and rich fruit character with hints of blackberry, cherry and raspberry which is supported by the savoury tannins for a long finish. Drinking great now but will continue to age well for 5 to 7 years.
Sangiovese is a variety our family has had an affiliation with for some time. A wine that has created an intercontinental tie between members of our family in Italy and Australia.
Showing aromas of dark cherry and pepper accompanied by subtle oak along with a medium bodied palate presenting lifted tones of plum, spice, and hints of chocolate. All influenced by traditional winemaking techniques adopted in the making of this wine.
Our endeavour this vintage was to minimise our intervention during the wine making process allowing the wine to evolve and express its own character.
The resultant wine shows notes of dark berries and cloves along with a textured mouthfeel. Created by fermenting with wild yeasts, hand plunging followed by being transferred into French oak barriques for a further 18 months.
The Exchange Chardonnay is made from premium cool climate fruit sourced from our ‘Block 2’ Western Branch vineyard in the Lenswood sub region of the Adelaide Hills. Pale straw in colour with lifted aromas of nutmeg and spice, it offers bright citrus and peach flavours on the palate. A delicious toasted cashew character gives way to a crisp and lingering finish. Enjoy now to 5 years.
Grown in the cool climate of the Adelaide Hills this Pinot Gris is harvested with a lovely natural acidity. This is the backbone which carries the voluptuous palate of this wine and results in a complete and delicious Pinot Gris.
This wine delivers a floral nose of jasmine, honeysuckle and apple blossom. The palate is layered with white stone fruits and pear and a hint of almond meal finishing with a lemon pith texture. The palate has creaminess through the centre and finishes with the crisp zing of the delicious acid.
Atze’s Corner is almost as beautiful as the wine it produces. It’s a sun-drenched scene of wild rose fields, where ancient Grenache vines grow, consistently delivering flavours newer vines can only dream of. An alluring light pink colour shines through the glass as you pour this dry style Rosé. It has amazing upfront characters of strawberries and pomegranate and you’ll love the lingering flavours of Vanilla Bean and Cranberry. Soft mouthfeel on your palate with refreshing acidity.
Vermentino hailing from the sunny Mediterranean coasts of France and Italy, is well suited to the Barossa Valley where it soaks up the warm summer days and keeps its fresh acidity.
Vinified quite simply and bottled young this wine is all about limey citrus and zesty, fresh tangy fruit stunning lingering flavours of honeysuckle and peach. Dry and utterly refreshing this is the perfect wine to drink right through the spring and summer.
Grenache, Shiraz and Mataro are the three bedrock red varieties on which the Barossa’s reputation is founded. Shiraz generally steals the regional limelight but the insightful vignerons of the valley know that the careful blending of the three results in something better than the sum of the parts.
This GSM is vibrantly purple betraying the presence of that deeply-coloured, muscular Mataro building on the colour of the Grenache and Shiraz. On the bouquet enjoy the sweet compote notes of blackcurrants and raspberries. It’s a complex, fascinating bouquet which keeps you going back. GSM’s palate is precise and bright with layered, elegant tannins supporting plush ripe dark berries and sweet red cherries. The fresh acidity which is retained in the wine adds an extra element of freshness and vibrancy lingering on the palate.
A classic smooth Cabernet Sauvignon from a quintessential Barossa Valley Cabernet vintage. It is approachable on release and the compelling aromas of juniper, black pepper and mint along with flavours of dark chocolate, plum and back currant will having you coming back for more.
It’s a delicious, softer, riper style of Cabernet which makes it a perfect fit to those who also love a rounder fuller style of Shiraz.
With its vibrantly opaque ruby colour and a bouquet of scents and spices this looks and smells like a classic, classy Barossa Valley Shiraz. The peppery spice, the vanilla of oak, the dark fruits and liquorice of the aroma flow through to the palate and wrap the rich tannins in a layer of flavour. You’re left with a lingering finish of cacao and the hope that there’s another glass available.

2016 Atze’s Corner The Bachelor Shiraz
Jaw-dropping Dark Fruit meshed with silky new French Oak! Couple a mature vineyard, planted in the esteemed soils of Koonunga and Ebenezer, with the Kalleske family’s five generations of grape growing experience and you’ve got a sure-fire recipe for success. Damsons, black cherries, liquorice and dark chocolate. The oak is seamlessly integrated into the wine providing a glorious spine and extra dimension.
Montepulciano hails from eastern Italy where it is famed for its deeply coloured reds with lively acidity and savoury tannins. Transplanted to an outstanding single vineyard in the sub region of Koonunga. “The Mob” loves the Barossa Valley’s long warm summers, and it’s flavours of dark chocolate, prunes and dark cherries are off the hook!
This is “one out of the box” that will leave your palate in a whirlpool of dark fruit, chocolate, mulberry and silky oak. Sitting just through the fence from a consistent Grange producing block, this site with its deep red clays and scattered iron stone across the surface, raises the eyebrows of some of the most fussy wine makers.
An awesome 2016 vintage, laser focused wine making and 18 months in barrel has served up a ball busting wine with a soft mouth feel.
Eddies’ Old Vine Shiraz is made from some of the world’s oldest Shiraz vines; a 100 year old vineyard planted in 1912 & two blocks of ‘senior’ vines from the Barossa floor. True to old vine character this Shiraz is intense, full-bodied and complex. Concentrated, ripe fruit coupled with passionate winemaking and ageing in new and seasoned French and American oak hogsheads give this wine a bursting rich bouquet, astonishing flavours and a smooth finish.
This low yielding block, planted in 1951, provides intensely flavoured grapes for this classic Barossa Shiraz. A minimum 18 months maturation in new French oak barrels coupled with it only being bottled from the most outstanding vintages results in a truly distinguished, complex and full-bodied wine. Due to the tiny size of this vineyard and the low yields, less than 50 cases are bottled in any one vintage.
The inky-deep purple colour catches your eye while floral characters, violet and rose petal, stream from the glass. Drinking Zen Master is pure joy, it is silky smooth, utterly seamless and perfectly balanced. Ripe, black fruit characters dominate the palate complexed by pepper spices and dark chocolate, a note of vanilla and hazelnut. So young, yet so polished. Too young in fairness, we’ve waited 100 years for the vines to grow we really should wait another decade to really enjoy this wine.

Made from 100% Pinot Noir fruit, this gorgeously crisp and refreshing rose is delicate and savoury with floral aromatics and fragrant herbal notes. The vibrant palate shows plenty of fresh tangy red berries and finishes crisp, clean and dry. It would make the perfect sundowner any night of the week.
The Purveyor Pinot Noir is made from premium cool climate fruit sourced from our Western Branch vineyard in
the Lenswood sub region of the Adelaide Hills. Light and bright in colour and big in personality, this Pinot has lifted aromas of rose, cherry and roasted spices on the nose, with bright berry flavours and a hint of game on the palate. Soft tannins and a savoury finish complete the story of this young and vibrant wine.
The Handcart Shiraz is made from premium cool climate fruit sourced from the northern part of the Adelaide Hills. This Shiraz is bursting with ripe blackberry aromas underpinned by subtle earthy characters. The palate has a savoury note, showing white pepper spice with well-balanced tannins delivering a dry finish.
Marjorie Méthode Champenoise Sparkling is inspired by our love of great Champagne. Our 2011 vintage is a limited release of 2000 bottles which has been aged on lees for 33 months which adds complex toasted nut and yeasty characters to the honeyed poached apple aromas. The palate offers notes of lemon and is crisp with a lingering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours.
This parcel of fruit was hand picked from our Western Branch Vineyard, whole bunch pressed, fermented on skins for one month and then aged in older French oak for twelve months. A complex and intriguing wine, it is savoury, with a citrus tang, herbaceous and bone dry. Notes of waxy honeycomb and dried herbs are present on the palate in this unexpected and punchy offering to the senses. Like the imminent arrival of a late summer storm, there is a wonderful tension between all the elements of this wine.
An elegant style of Pinot Noir with lifted aromas of summer berries underpinned by secondary fruit characters of dark cherries. The palate is layered and complex showing good integration of fine, drying tannins and savoury gamey tones. Hint of cocoa and lingering acidity to finish. A true ‘burgundian’ style Pinot that has texture and body, with a balance of rich fruit and savoury characters
Out of the shadow and into the light steps our Ombre Gamay; ready and poised to take centre stage. Historically cast in the shadow of it’s varietal neighbour Pinot Noir, Gamay is enjoying a timely moment in the sun. Vibrant in hue and exuberant in youthful personality, this wine delivers juicy red berry fruits on the nose with subtle spice and fine tannins on the palate.
The Rocco is sourced from two separate vineyards at Mt Torrens and Macclesfield in the Adelaide Hills. We make the best selection from individual barrels that exhibit the best varietal character. This wine has a dusty characteristic, exhibiting fine tannins and finishing with savoury, herbal notes. It has bright cassis aromas on the nose with brambly blackberry fruit flavours. Matured for 12–15 months in a variety of old and new French oak, it is made to drink now to ten years.
